Paloma: The dove isn't just the life of the party; she's been a celebrated guest at Mexican festivities for nearly half a century. Her origins take root in the 1960s - a moment where minds were hazy and ideas sky-high. Originally concocted as a simple mixture of Squirt and tequila, our rendition is a lofty blend or reposed tequila and housemade grapefruit soda with tamarind and pink peppercorn. It will have you and your company soaring.
Mai Tai: Mixing up the perfectly balanced cocktail can be downright exhausting! Our sage beachcomber has worked tirelessly to build a Mai Tai worthy of new legends while returning this drink to its original glory. But fear not, he’s secured the ideal spot for repose while you sip upon this blissful beverage. With a fine mix of Jamaican and West Indies Rum, lime juice, House-made orange liqueur and orgeat, you, too, may be whisked away to paradise, pausing amongst the palms, a beachcomber in your own right.
Thai Gimlet It’s believed that the Gimlet originated to keep sailors scurvy-free by administering a daily dose of lime juice. With vitality in mind, we’ve developed our own Gimlet, taking a “sweat-it-out” approach to good health. This adaptation calls on vodka and Thai Chile for a dose of heat, while coconut, galangal, and tamarind round out the feverish blend for a smooth and balanced libation. Whether traversing open waters or in the comfort of our homes, let’s raise a glass to good health, fair winds, and following seas!

Manhattan: The history of the Manhattan is cloaked in mystery. Was it an enigmatic mixologist at the Manhattan club, or could it have been the chatty young chap down at the Manhattan Inn? Perhaps this supernatural bartender could be in many places at once, popularizing the late 19th-century potion amongst New York’s savviest crowd. We hope to honor the Manhattan mysterioso with our rendition, mixing Bourbon, Accompani Sweet Vermouth, Aromatic Bitters, and a splash of cherry juice for a bit of magician’s flair.
Gin Fizz: To enjoy aperitivo is to unwind from the day’s events and prime the palate for any feast the evening may bring. What better way to begin the evening than sipping the botanical fizz of an iris-imbued spritz? Dotting the hillsides of Italy, the iris fiore, or flower, is revered for its aroma and regality. And regal this drink is: a sophisticated blend of floral notes with a touch of bitterness that positions it above the rest.
No. 3 Daiquiri: Constantino "Constante" Ribalaigua, crafted this take on the classic daiquiri at his renowned bar, El Floridita. Revered as the King of Cocktails, Constante was the preferred bartender for locals and expats alike in 1930's Havana. though he's since departed the physical realm, his presence oversees El Floridita's bartenders, ensuring the faithful rendition of his recipes. Our homage remains loyal to his legacy, blending rum, fresh lime and grapefruit juice, and Maraschino liqueur.

Cosmos: Truth regarding the genesis of the Cosmopolitan is fuzzy, and we’re not here to provide one bit of coherence. In an ever-expanding cosmos, our rendition launches from the version created by Cheryl Cook in Miami Beach’s heyday. Enjoy this pastel libation in your finest linen slacks, and make a toast to the evening’s celestial affair.”
Bees Knees: Did you know the Unsinkable Molly Brown was famed for more than her ability to stay afloat? A fixture at Parisian women’s speakeasies, the spirited socialite is rumored to have doctored up bathtub gin by adding honey and lemon, thus birthing the iconic Bees Knees cocktail. Our rendition celebrates the simplicity and balance of this prohibition staple. Gin and lemon juice mingle with west coast honey and Accompani Blue Dorris for a subtly sweet, floral sipper that’s utterly buzz-worthy!
